The Bilona ghee making process
The traditional bilona ghee-making process is a multi-step method. While some sources may group steps together, a common breakdown includes the following :-

Step 01 | From Cow to Pail
Milk Collection
Fresh, healthy milk is carefully collected by hand from indigenous Sahiwal cows, known for producing A2 milk. This is the foundational step for creating high-quality, pure ghee.

Step 02 | Gentle Flame Boil
Milk Boiling
The fresh milk is gently boiled to eliminate any impurities and make it safe for consumption. This process also helps to slightly concentrate the milk's nutrients.

Step 03 | Curd Comes Alive
Curd Setting
Once the boiled milk has cooled to a warm temperature, a spoonful of starter curd (known as jamavan) is added. The mixture is then left overnight in an earthen pot to ferment and form a thick curd.

Step 04 | The Rhythmic Churn

The set curd is churned using a traditional wooden churner called a bilona. This slow, rhythmic process, often done by hand, is crucial for separating the butter from the buttermilk without generating excessive heat.

Step 05 | Makhan Rising
Butter Separation
After churning, a layer of fresh white butter, known as makhan, floats to the top. This butter is carefully collected and separated from the remaining buttermilk, which can be used for other purposes.

The collected butter is then placed in a heavy-bottomed pot and slow-cooked over a low flame. As the butter melts, it clarifies, and the water content evaporates, leaving behind golden, fragrant ghee.

The hot, newly formed ghee is carefully strained through a fine sieve or a cotton cloth to remove any remaining milk solids that have settled at the bottom of the pot.

Finally, the pure, clarified ghee is allowed to cool slightly before being transferred and stored in a clean, dry glass jar to preserve its freshness and aroma.
